Make Lentil and Potato Stew

Lentil and Potato Stew

Ingredients:

- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon paprika
- 1/2 teaspoon ground turmeric
- 2 cups vegetable broth
- 2 cups cooked lentils
- 2 cups diced potatoes
- 2 carrots, diced
- 1/4 cup chopped fresh parsley
- Salt and pepper to taste

Instructions:

1. Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.

2. Add the cumin, coriander, paprika, and turmeric and cook for 1 minute.

3. Add the vegetable broth, lentils, potatoes, and carrots. Bring to a boil, then reduce the heat and simmer for 20 minutes, or until the potatoes and carrots are tender.

4. Stir in the parsley and season with salt and pepper to taste. Serve hot.
