Lentil Quinoa Pilaf
Ingredients:
-1 cup lentils
-1 cup quinoa
-2 cups vegetable broth
-1 onion, diced
-2 cloves garlic, minced
-1 teaspoon cumin
-1 teaspoon paprika
-1/2 teaspoon turmeric
-1/2 teaspoon coriander
-1/4 teaspoon cayenne pepper
-1/2 teaspoon salt
-1/4 teaspoon black pepper
-1 tablespoon olive oil
Instructions:
1. In a medium saucepan, heat the olive oil over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
2. Add the cumin, paprika, turmeric, coriander, cayenne pepper, salt, and black pepper. Stir to combine.
3. Add the lentils and quinoa and stir to combine.
4. Add the vegetable broth and bring to a boil. Reduce the heat to low and simmer for 20 minutes, or until the lentils and quinoa are cooked through.
5. Serve hot. Enjoy!
