Lentil Rice Bowl

Ingredients:

-1 cup uncooked white rice
-1 cup cooked lentils
-1/2 cup diced carrots
-1/2 cup diced tomatoes
-1 tablespoon olive oil
-Salt and pepper to taste

Instructions:

1. Cook the rice according to package instructions.

2. Heat the olive oil in a large skillet over medium heat.

3. Add the carrots and cook for 3-4 minutes, stirring occasionally.

4. Add the tomatoes and cook for another 2-3 minutes, stirring occasionally.

5. Add the cooked lentils and season with salt and pepper to taste.

6. Cook for another 2-3 minutes, stirring occasionally.

7. Add the cooked rice and stir to combine.

8. Cook for another 2-3 minutes, stirring occasionally.

9. Serve the lentil rice bowl warm. Enjoy!
