Cucumber Egg Salad
Ingredients:
- 2 cucumbers, peeled and diced
- 4 hard-boiled eggs, peeled and diced
- 2 cups of romaine lettuce, chopped
- 2 tablespoons of mayonnaise
- 1 tablespoon of Dijon mustard
- Salt and pepper to taste
Instructions:
1. In a large bowl, combine the diced cucumbers, eggs, and romaine lettuce.
2. In a small bowl, whisk together the mayonnaise, Dijon mustard, salt, and pepper.
3. Pour the dressing over the cucumber and egg mixture and mix until everything is evenly coated.
4. Serve chilled or at room temperature. Enjoy!
