Liver and Mushroom Stir-Fry
Ingredients:
- 4 ounces of liver, cut into thin strips
- 2 cloves of garlic, minced
- 2 cups of mushrooms, sliced
- 1 lemon, juiced
- 1 apple, diced
- 1/4 cup of olives, sliced
- 1/2 cup of bell peppers, diced
- 2 tablespoons of olive oil
Instructions:
1. Heat the olive oil in a large skillet over medium-high heat.
2. Add the liver strips and garlic to the skillet and cook for 3-4 minutes, stirring occasionally.
3. Add the mushrooms, lemon juice, apple, olives, and bell peppers to the skillet and cook for an additional 5 minutes, stirring occasionally.
4. Serve the stir-fry over a bed of cooked rice or quinoa. Enjoy!
