Loaded Breakfast Potato Skins
Ingredients:
- 4 medium potatoes
- 4 strips of bacon
- 2 eggs
- Salt and pepper, to taste
- Optional toppings: shredded cheese, sour cream, chives
Instructions:
1. Preheat oven to 400 degrees F.
2. Wash and dry potatoes. Prick potatoes with a fork and bake for 45 minutes, or until tender.
3. Meanwhile, cook bacon in a skillet over medium-high heat until crisp. Remove bacon from skillet and set aside.
4. When potatoes are done, remove from oven and let cool slightly. Cut potatoes in half lengthwise and scoop out the insides, leaving a thin layer of potato in the skins.
5. Place potato skins on a baking sheet and brush with a little olive oil. Bake for 10 minutes, or until lightly golden.
6. In the same skillet used to cook the bacon, fry eggs until desired doneness.
7. To assemble, place one egg in each potato skin and top with crumbled bacon. Sprinkle with salt and pepper.
8. Bake for an additional 5 minutes, or until cheese is melted and eggs are cooked through.
9. Serve with optional toppings, such as shredded cheese, sour cream, and chives. Enjoy!
