Lobio with Brinjal and Tomato
Ingredients:
-1 cup brinjal, diced
-1 cup tomato, diced
-1 cup lobio
-1 teaspoon garlic, minced
-1 teaspoon onion, minced
-1 tablespoon olive oil
-Salt and pepper to taste
Instructions:
1. Heat the olive oil in a large skillet over medium-high heat.
2. Add the garlic and onion and sauté for 2 minutes.
3. Add the brinjal and tomato and cook for 5 minutes, stirring occasionally.
4. Add the lobio and season with salt and pepper.
5. Cook for an additional 5 minutes, stirring occasionally.
6. Serve hot. Enjoy!
