Recipe: Macarrones con Queso

Ingredients:
- 2 cups elbow macaroni
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 2 cups milk
- 2 cups shredded cheddar cheese
- Salt and pepper to taste
- Optional: breadcrumbs for topping

Instructions:
1. Cook the elbow macaroni according to package instructions until al dente. Drain and set aside.
2. In a large saucepan, melt the butter over medium heat. Add the flour and whisk constantly for about 1 minute to create a roux.
3. Slowly pour in the milk while whisking continuously to avoid lumps. Cook the mixture until it thickens, about 5-7 minutes.
4. Reduce the heat to low and stir in the shredded cheddar cheese until melted and smooth. Season with salt and pepper to taste.
5. Add the cooked macaroni to the cheese sauce and stir until well coated.
6. If desired, transfer the macaroni and cheese to a baking dish, sprinkle breadcrumbs on top, and broil in the oven for a few minutes until golden brown.
7. Serve the macarrones con queso hot and enjoy!
