Recipe: Mamay Walnut Cake with Citrus Glaze
Ingredients:
- 2 cups cake flour
- 1 cup mamay, mashed
- 1/2 cup chopped walnuts
- 1 tsp cinnamon
- 1 cup coconut milk
- Zest of 1 lemon
- Juice of 1 mandarin
- 1 cup sugar
- 1/2 cup butter, softened
Instructions:
1. Preheat the oven to 350°F (180°C) and grease a cake pan.
2. In a mixing bowl, cream together the butter and sugar until light and fluffy.
3. Add in the mashed mamay, coconut milk, lemon zest, and mandarin juice. Mix well.
4. Gradually fold in the cake flour, cinnamon, and chopped walnuts until just combined.
5. Pour the batter into the prepared cake pan and smooth the top.
6. Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
7. While the cake is baking, prepare the citrus glaze by mixing together some powdered sugar with lemon and mandarin juice until smooth.
8. Once the cake is done, let it cool slightly before drizzling the citrus glaze over the top.
