Make Mango Chicken and Rice
Mango Chicken and Rice
Ingredients:
- 2 cups cooked white rice
- 2 boneless, skinless chicken breasts, cut into cubes
- 1 mango, peeled and cubed
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- Salt and pepper to taste
Instructions:
1. Heat the olive oil in a large skillet over medium-high heat.
2. Add the chicken cubes and cook until lightly browned, about 5 minutes.
3. Add the garlic and cumin and cook for another minute.
4. Add the mango cubes and cook for another 2 minutes.
5. Add the cooked rice and stir to combine.
6. Season with salt and pepper to taste.
7. Cook for another 5 minutes, stirring occasionally, until the rice is heated through and the chicken is cooked through.
8. Serve hot. Enjoy!
