Mango Chicken Curry
Ingredients:
-2 tablespoons olive oil
-1 onion, diced
-2 cloves garlic, minced
-1 teaspoon ground cumin
-1 teaspoon ground coriander
-1 teaspoon ground turmeric
-1 teaspoon garam masala
-1/2 teaspoon chili powder
-1/2 teaspoon salt
-1/4 teaspoon black pepper
-1 large tomato, diced
-1 large potato, peeled and diced
-1 cup chicken broth
-1 cup diced mango
-1/4 cup chopped fresh cilantro
Instructions:
1. Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
2. Add the cumin, coriander, turmeric, garam masala, chili powder, salt, and pepper and cook for 1 minute.
3. Add the tomato and potato and cook for 5 minutes.
4. Add the chicken broth and bring to a boil. Reduce the heat to low and simmer for 10 minutes.
5. Add the mango and cilantro and cook for 5 minutes.
6. Serve over cooked rice or with naan bread. Enjoy!
