Mango Chicken Fried Rice
Ingredients:
- 2 cups cooked white rice
- 1 mango, peeled and diced
- 1 pound boneless, skinless chicken breasts, cut into cubes
- 2 tablespoons vegetable oil
- 2 cloves garlic, minced
- 1/2 teaspoon ground ginger
- 1/4 teaspoon red pepper flakes
- 2 tablespoons soy sauce
- 2 tablespoons honey
- 2 tablespoons freshly squeezed lime juice
- 2 green onions, thinly sliced
- Salt and pepper, to taste
Instructions:
1. Heat the vegetable oil in a large skillet over medium-high heat.
2. Add the chicken cubes and season with salt and pepper. Cook until the chicken is cooked through, about 5 minutes.
3. Add the garlic, ginger, and red pepper flakes and cook for another minute.
4. Add the cooked rice and mango and stir to combine.
5. Add the soy sauce, honey, and lime juice and stir to combine.
6. Cook for another 3-4 minutes, stirring occasionally.
7. Taste and adjust seasoning if needed.
8. Serve topped with green onions. Enjoy!
