Recipe Name: Mango Chicken Stir-Fry with Brown Rice

Ingredients:
- 2 chicken breasts, boneless and skinless
- 1 teaspoon sea salt
- 1/2 teaspoon black pepper
- 2 ripe mangos, peeled and diced
- 1 green bell pepper, thinly sliced
- 1/4 cup chicken broth
- 2 green onions, sliced
- 3 cloves garlic, minced
- 1 cup cooked brown rice

Step-by-Step Guide:

1. Prepare the chicken breasts by trimming any excess fat and slicing them into thin strips. Season the chicken with sea salt and black pepper, ensuring each piece is evenly coated.

2. Heat a large skillet or wok over medium-high heat. Add a tablespoon of cooking oil and let it heat up.

3. Once the oil is hot, add the seasoned chicken strips to the skillet. Cook for about 5-6 minutes, or until the chicken is cooked through and no longer pink in the center. Stir occasionally to ensure even cooking.

4. Remove the cooked chicken from the skillet and set it aside on a plate.

5. In the same skillet, add the minced garlic and sliced green onions. Sauté for about 1-2 minutes until fragrant and slightly softened.

6. Add the diced mangos and sliced green bell pepper to the skillet. Stir-fry for another 2-3 minutes until the vegetables are slightly tender.

7. Pour in the chicken broth and bring it to a simmer. Allow the mixture to cook for an additional 2 minutes, allowing the flavors to meld together.

8. Return the cooked chicken to the skillet and toss it with the mango and vegetable mixture. Stir-fry for another minute to heat through.

9. Serve the mango chicken stir-fry over a bed of cooked brown rice. Garnish with additional sliced green onions, if desired.
