Mango Coconut Berenjena Rice Bowl
Ingredients:
- 1 large berenjena, diced
- 1/2 cup coconut flakes
- 1 mango, diced
- 1/2 cup shredded cheese
- 1 cup cooked white rice
Instructions:
1. Preheat oven to 375°F.
2. Place diced berenjena on a baking sheet lined with parchment paper. Sprinkle with coconut flakes and bake for 15 minutes, or until berenjena is tender.
3. In a medium bowl, combine mango, cheese, and cooked rice.
4. Once berenjena is finished baking, add it to the bowl with the other ingredients and mix until combined.
5. Serve warm. Enjoy!
