Mango-Kale Chicken and Avocado Rice Bowl

Ingredients:

- 2 cups cooked white rice
- 2 boneless, skinless chicken breasts
- 1 ripe avocado, diced
- 2 cups chopped kale
- 1 mango, diced
- 2 tablespoons olive oil
- 1 teaspoon paprika
- 1 teaspoon baking soda
- Salt and pepper, to taste
- Juice of 1 lemon

Instructions:

1. Preheat oven to 375°F.

2. Place chicken breasts on a baking sheet and season with paprika, baking soda, salt, and pepper. Bake for 20 minutes, or until chicken is cooked through.

3. Meanwhile, heat olive oil in a large skillet over medium-high heat. Add kale and cook for 3-4 minutes, stirring occasionally.

4. Add cooked rice, mango, and avocado to the skillet and stir to combine. Cook for an additional 3-4 minutes.

5. Squeeze lemon juice over the top and stir to combine.

6. Serve the mango-kale chicken and avocado rice bowl warm. Enjoy!
