Make Mango-Kiwi Chicken and Rice
Mango-Kiwi Chicken and Rice
Ingredients:
- 2 cups cooked white rice
- 2 cups cooked, diced chicken
- 2 cups diced potatoes
- 1 mango, diced
- 2 kiwis, diced
- 2 tablespoons olive oil
- 2 tablespoons soy sauce
- Salt and pepper, to taste
Instructions:
1. Heat the olive oil in a large skillet over medium-high heat.
2. Add the potatoes and cook, stirring occasionally, until they are lightly browned and tender, about 8 minutes.
3. Add the chicken and cook, stirring occasionally, until it is cooked through, about 8 minutes.
4. Add the mango and kiwi and cook, stirring occasionally, until they are softened, about 5 minutes.
5. Add the cooked rice and soy sauce and stir to combine.
6. Season with salt and pepper, to taste.
7. Serve warm. Enjoy!
