Mango Pineapple Chicken Nachos
Ingredients:
- 2 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cups cooked white rice
- 2 cups shredded lettuce
- 1 cup fresh spinach leaves
- 1 mango, diced
- 1/2 cup diced pineapple
- 1/2 cup nacho chips
- 1/2 cup diced avocado
- 1/4 cup diced onion
Instructions:
1. Preheat oven to 375°F.
2. In a medium bowl, combine olive oil, garlic powder, onion powder, salt, and pepper.
3. Add chicken breasts to the bowl and toss to coat.
4. Place chicken on a baking sheet and bake for 25 minutes.
5. Meanwhile, assemble the nachos. On a large plate or platter, layer the cooked rice, lettuce, spinach, mango, pineapple, nacho chips, avocado, and onion.
6. When the chicken is finished cooking, let it cool for 5 minutes before slicing into strips.
7. Place the chicken strips on top of the nacho mixture.
8. Serve and enjoy!
