Make Mango Rutabaga Curry

Mango Rutabaga Curry

Ingredients:

- 2 large rutabagas, peeled and diced
- 2 mangos, peeled and diced
- 2 bananas, peeled and diced
- 2 cloves garlic, minced
- 2 tablespoons molasses
- 1 teaspoon curry powder
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon ground turmeric
- 1 teaspoon ground ginger
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground cardamom
- 1/2 teaspoon ground black pepper
- 1/4 teaspoon cayenne pepper
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 1/2 cup water
- 1 tablespoon vegetable oil
- Salt to taste

Instructions:

1. Heat the oil in a large skillet over medium heat. Add the garlic and cook for 1 minute.

2. Add the rutabagas, mangos, bananas, molasses, and all the spices. Stir to combine.

3. Add the water and bring to a simmer. Simmer for 10 minutes, stirring occasionally.

4. Reduce the heat to low and simmer for an additional 10 minutes, stirring occasionally.

5. Taste and adjust seasoning with salt if needed. Serve hot.
