Maple Roasted Turkey with Carrots and Parsnips

Ingredients:

-1 turkey (4-5 lbs)
-2 large carrots, peeled and cut into 1-inch pieces
-2 large parsnips, peeled and cut into 1-inch pieces
-1/4 cup maple syrup
-2 tablespoons olive oil
-Salt and pepper, to taste

Instructions:

1. Preheat oven to 375°F.

2. Place the turkey in a roasting pan.

3. In a large bowl, combine the carrots, parsnips, maple syrup, olive oil, salt, and pepper. Mix until all the vegetables are evenly coated.

4. Place the vegetables around the turkey in the roasting pan.

5. Roast the turkey for 1 hour and 15 minutes, or until the internal temperature of the turkey reaches 165°F.

6. Remove the turkey from the oven and let rest for 10 minutes before carving.

7. Serve the turkey with the roasted carrots and parsnips. Enjoy!
