Make Maracuja Glazed Duck with Chili

Recipe Name: Maracuja Glazed Duck with Chili

Ingredients:
- 1 duck, cleaned and pat dried
- 2-3 fresh maracuja (passion fruit)
- 1 red chili pepper
- Salt and pepper to taste

Instructions:
1. Preheat the oven to 375°F (190°C).
2. Score the duck skin in a criss-cross pattern, being careful not to cut into the meat.
3. Season the duck generously with salt and pepper, both inside and out.
4. Place the duck on a roasting pan and roast in the preheated oven for about 1 hour or until the skin is crispy and the meat is cooked through.
5. While the duck is roasting, prepare the maracuja glaze. Cut the maracuja in half and scoop out the pulp into a small saucepan.
6. Add the finely chopped red chili pepper to the saucepan with the maracuja pulp.
7. Cook the mixture over low heat, stirring occasionally, until it thickens into a glaze consistency.
8. Once the duck is cooked, remove it from the oven and brush the maracuja glaze over the crispy skin.
9. Return the duck to the oven for another 10-15 minutes to allow the glaze to caramelize.
10. Remove the duck from the oven and let it rest for a few minutes before carving.
11. Serve the maracuja glazed duck with chili hot and enjoy!
