Mediterranean Baked Pasta
Ingredients:
- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1/4 cup capers
- 1/2 cup black olives, sliced
- 2 cups diced tomatoes
- 2 tablespoons fresh oregano, chopped
- Salt and pepper, to taste
- 8 ounces uncooked pasta
- 2 cups shredded cheese (mozzarella, cheddar, or a combination)
- 4 eggs, lightly beaten
- 4 slices of bread, cubed
Instructions:
1. Preheat oven to 350°F.
2. Heat olive oil in a large skillet over medium heat. Add onion, garlic, bell pepper, capers, and olives. Cook until vegetables are softened, about 5 minutes.
3. Add tomatoes, oregano, salt, and pepper. Cook for an additional 5 minutes.
4. Meanwhile, cook pasta according to package instructions. Drain and set aside.
5. In a large bowl, combine cooked pasta, vegetable mixture, cheese, eggs, and bread cubes. Mix until everything is evenly combined.
6. Pour mixture into a greased 9x13 inch baking dish.
7. Bake for 25-30 minutes, or until cheese is melted and bubbly.
8. Serve warm. Enjoy!
