Mediterranean Breakfast Frittata

Ingredients:
- 4 eggs
- 1/4 cup of olive oil
- 1/4 cup of diced onion
- 1/4 cup of diced bell pepper
- 1/4 cup of diced tomatoes
- 1/4 cup of diced feta cheese
- 1/4 cup of chopped fresh parsley
- Salt and pepper to taste

Instructions:

1. Preheat oven to 375 degrees F.

2. In a medium bowl, whisk together eggs, olive oil, onion, bell pepper, tomatoes, feta cheese, parsley, salt, and pepper.

3. Grease a 9-inch pie plate with butter or non-stick spray.

4. Pour egg mixture into the pie plate and spread evenly.

5. Bake in preheated oven for 25 minutes, or until eggs are set and lightly golden brown.

6. Serve warm with a side of toast or a salad. Enjoy!
