Mediterranean Breakfast Sandwich
Ingredients:
- 2 slices of bread
- 2 eggs
- 2 tablespoons of hummus
- 1/4 cup of olives, chopped
- 1/4 cup of spinach, chopped
Instructions:
1. Heat a non-stick pan over medium heat.
2. Crack the eggs into the pan and cook until the whites are set and the yolks are cooked to your preference.
3. Spread the hummus on one side of each slice of bread.
4. Place the cooked eggs on one slice of bread.
5. Top the eggs with the chopped olives and spinach.
6. Place the other slice of bread on top and press down lightly.
7. Cut the sandwich in half and enjoy!
