Mediterranean Chicken Bowls
Ingredients:
- 2 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup diced red onion
- 1/4 cup diced red bell pepper
- 1/4 cup diced yellow bell pepper
- 1/4 cup diced green bell pepper
- 1/2 cup cherry tomatoes, halved
- 1/4 cup pitted kalamata olives
- 1/4 cup crumbled feta cheese
- 1/4 cup chopped fresh parsley
Instructions:
1. Preheat oven to 375 degrees F.
2. In a small bowl, mix together olive oil, garlic powder, oregano, basil, salt, and pepper.
3. Place chicken breasts in a baking dish and coat with the olive oil mixture.
4. Bake in preheated oven for 25 minutes or until chicken is cooked through.
5. Meanwhile, in a large bowl, combine red onion, red bell pepper, yellow bell pepper, green bell pepper, cherry tomatoes, olives, feta cheese, and parsley.
6. Once chicken is cooked through, remove from oven and let cool for 5 minutes.
7. Slice chicken into strips and add to the bowl with the vegetables.
8. Toss to combine.
9. Serve in individual bowls and enjoy!
