Ingredients:
- 1 cup of rice
- 2 medium-sized eggplants, diced
- 2 tomatoes, diced
- 4 eggs
- 4 slices of bacon, chopped
- 4 anchovy fillets
- Salt and pepper to taste
- Olive oil for cooking
Step by Step Guide:
1. Cook the rice according to package instructions and set aside.
2. In a large skillet, heat some olive oil over medium heat. Add the chopped bacon and cook until crispy.
3. Add the diced eggplant to the skillet and cook until softened, about 5-7 minutes.
4. Push the eggplant to one side of the skillet and crack the eggs into the other side. Scramble the eggs until cooked through.
5. Add the diced tomatoes and anchovy fillets to the skillet and cook for another 2-3 minutes, stirring to combine all the ingredients.
