Mediterranean Fish and Potato Bake
Ingredients:
- 2 large potatoes, peeled and cut into cubes
- 2 fillets of white fish (such as cod or haddock)
- 1 can of artichoke hearts, drained and chopped
- 1/2 cup of black olives, sliced
- 2 cloves of garlic, minced
- 2 tablespoons of olive oil
- 2 tablespoons of fresh parsley, chopped
- Salt and pepper to taste
Instructions:
1. Preheat oven to 400 degrees F.
2. In a large bowl, combine the potatoes, artichoke hearts, black olives, garlic, olive oil, parsley, salt and pepper. Toss to combine.
3. Spread the mixture into a greased 9x13 inch baking dish.
4. Place the fish fillets on top of the potato mixture.
5. Bake in preheated oven for 25-30 minutes, or until the potatoes are tender and the fish is cooked through.
6. Serve hot. Enjoy!
