Mediterranean Quinoa Bowl
Ingredients:
- 1 cup quinoa
- 2 tablespoons olive oil
- 1/2 cup olives, pitted and halved
- 1/2 cup shredded cheese
- 1 cup broccoli florets
- 1 tomato, diced
Instructions:
1. Cook quinoa according to package instructions.
2. Heat olive oil in a large skillet over medium-high heat. Add olives, cheese, broccoli, and tomato. Cook for 5 minutes, stirring occasionally.
3. Add cooked quinoa to the skillet and stir to combine. Cook for an additional 2-3 minutes.
4. Serve warm. Enjoy!
