Mediterranean Roasted Potatoes

Ingredients:

- 4 large potatoes, peeled and cut into cubes
- 1/2 cup black olives, pitted and halved
- 1/2 cup red bell peppers, diced
- 1/2 cup yellow onions, diced
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper to taste

Instructions:

1. Preheat oven to 375 degrees F.

2. Place potatoes, olives, peppers, and onions in a large bowl.

3. Drizzle olive oil over the vegetables and mix until everything is evenly coated.

4. Add garlic powder, oregano, thyme, salt, and pepper to the bowl and mix until everything is evenly seasoned.

5. Spread the vegetables onto a baking sheet and bake for 25-30 minutes, or until potatoes are golden and tender.

6. Serve warm and enjoy!
