Mediterranean Strata

Ingredients:

-2 medium onions, halved and thinly sliced
-2 tablespoons olive oil
-2 garlic cloves, minced
-1/2 cup chopped roasted sweet red peppers, drained
-1/2 cup chopped pimiento-stuffed olives
-3 cups cubed Italian bread
-1/2 cup crumbled feta cheese
-6 eggs, lightly beaten
-1/2 cup chicken broth
-1/4 teaspoon pepper
-1/4 teaspoon dried oregano

Instructions:

1. Preheat oven to 350°F.

2. Heat olive oil in a large skillet over medium heat. Add onions and garlic and cook, stirring occasionally, until the onions are softened and lightly browned, about 8 minutes.

3. Add the red peppers, olives, and Italian bread cubes to the skillet and cook, stirring occasionally, until the bread cubes are lightly toasted, about 5 minutes.

4. Transfer the mixture to a 9x13-inch baking dish. Sprinkle with feta cheese.

5. In a medium bowl, whisk together the eggs, chicken broth, pepper, and oregano. Pour the egg mixture over the bread mixture in the baking dish.

6. Bake for 30 minutes, or until the top is golden brown and the eggs are set. Serve warm. Enjoy!
