Ingredients:
- 1 large tortilla
- 2 tbsp hummus
- 1/4 cup roasted peppers, sliced
- 2 tbsp black olive tapenade
- 1/4 cup roasted smoked aubergine, diced
- 1/4 cup roasted onions, sliced
- 1/4 cup tofu, diced
Step-by-Step Guide:
1. Lay the tortilla flat on a clean surface.
2. Spread the hummus evenly over the tortilla, leaving a small border around the edges.
3. Layer the roasted peppers, black olive tapenade, roasted smoked aubergine, roasted onions, and tofu on top of the hummus.
4. Carefully fold in the sides of the tortilla and then roll it up tightly, starting from the bottom edge.
5. Heat a non-stick pan over medium heat.
6. Place the wrapped tortilla seam-side down on the pan and cook for 2-3 minutes on each side, or until the tortilla is golden brown and crispy.
7. Remove from the pan and let it cool for a minute before slicing it in half.
