Recipe Name: Mediterranean Vegetable Medley

Ingredients:
- 1 red bell pepper
- 1 yellow bell pepper
- 1 green bell pepper
- 2 cups spinach leaves
- 2 tomatoes
- 1 cup crumbled feta cheese
- 1 small eggplant
- 8 ounces noodles (your choice)
- 1 cup cooked rice
- 8 ounces gnocchi
- 8 ounces tofu, cubed
- Olive oil
- Salt and pepper to taste

Step-by-Step Guide:

1. Preheat your oven to 400°F (200°C). Slice the red, yellow, and green bell peppers into thin strips and set aside.
2. Cut the eggplant into small cubes and place them on a baking sheet. Drizzle with olive oil and season with salt and pepper. Roast in the preheated oven for about 20 minutes or until tender.
3. In a large pot, cook the noodles according to package instructions. Drain and set aside.
4. In a separate pot, cook the gnocchi according to package instructions. Drain and set aside.
5. Heat a drizzle of olive oil in a large skillet over medium heat. Add the tofu cubes and cook until golden brown on all sides. Remove from the skillet and set aside.
6. In the same skillet, add the bell peppers and sauté until slightly softened, about 5 minutes. Add the spinach leaves and cook until wilted.
7. Dice the tomatoes and add them to the skillet. Cook for an additional 2 minutes.
8. Add the cooked rice, roasted eggplant, noodles, gnocchi, and tofu to the skillet. Stir gently to combine all the ingredients.
9. Sprinkle the crumbled feta cheese over the mixture and stir lightly to incorporate.
10. Cook for a few more minutes until everything is heated through and the flavors have melded together.
11. Season with salt and pepper to taste.
12. Serve the Mediterranean Vegetable Medley warm and enjoy!
