Mexican Chicken and Rice

Ingredients:

- 2 tablespoons of palm oil
- 1 pound of chicken, cut into cubes
- 1 cup of uncooked white rice
- 1 cup of cooked black beans
- 1 teaspoon of salt
- 1 teaspoon of garlic powder
- 1 teaspoon of onion powder
- 2 tablespoons of chopped fresh cilantro

Instructions:

1. Heat the palm oil in a large skillet over medium-high heat.

2. Add the chicken cubes and cook until golden brown, about 5 minutes.

3. Add the uncooked rice and stir to combine.

4. Add the cooked black beans, salt, garlic powder, and onion powder. Stir to combine.

5. Reduce the heat to low and cover the skillet. Simmer for 20 minutes, stirring occasionally.

6. Remove the skillet from the heat and stir in the chopped cilantro.

7. Serve the Mexican chicken and rice hot. Enjoy!
