Mexican Egg Tostada
Ingredients:
- 2 eggs
- 2 tostadas
- 1/4 cup beef crumbles
- 1/4 cup shredded Mexican cheese
- 1/4 cup diced bell peppers
- 1/4 cup diced red onions
Instructions:
1. Preheat oven to 350 degrees F.
2. In a medium skillet, cook beef crumbles over medium-high heat until cooked through.
3. In a small bowl, whisk eggs until combined.
4. Add bell peppers and red onions to the skillet and cook until softened, about 5 minutes.
5. Add the egg mixture to the skillet and cook until eggs are set, about 5 minutes.
6. Place tostadas on a baking sheet and top with the egg mixture.
7. Sprinkle Mexican cheese over the top of the tostadas.
8. Bake in preheated oven for 10 minutes, or until cheese is melted and bubbly.
9. Serve hot. Enjoy!
