Make Mexican-Inspired Pasta Bake
Recipe: Mexican-Inspired Pasta Bake
Ingredients:
- 1 onion, diced
- 3 cloves of garlic, minced
- 1 cup cherry tomatoes, halved
- 1 cup cranberry beans, cooked
- 8 oz spaghetti
- 8 oz macaroni no 6
- 1 cup Salsa pimiento verde
- 1 cup oat milk
- 1 baguette, sliced
- 4 oz Fideo no 0
- 1 small egg
- 1 cup glass pasta
- Handful of fresh basil, chopped
- 1/2 cup pan rallado (breadcrumbs)
- 1 cup cooked rice
- 2 ripe avocados, sliced
- Various spices and herbs (such as cumin, paprika, oregano, salt, and pepper)
- 2 tbsp cornflour
- 2 tbsp flour
- 1 tsp baking powder
Instructions:
1. Preheat the oven to 375°F (190°C) and grease a baking dish.
2. In a large skillet, sauté the diced onion and minced garlic until fragrant.
3. Add in the cherry tomatoes, cranberry beans, and cooked rice. Cook for a few minutes until the tomatoes start to soften.
4. In a separate pot, cook the spaghetti and macaroni according to package instructions. Drain and set aside.
5. In a mixing bowl, combine the Salsa pimiento verde, oat milk, spices, and herbs. Mix well.
6. Add the cooked pasta to the skillet with the onion and tomato mixture. Pour the Salsa pimiento verde sauce over the pasta and mix until everything is well coated.
7. Transfer the pasta mixture to the greased baking dish.
8. In a small bowl, whisk together the small egg, cornflour, flour, and baking powder. Pour this mixture over the pasta in the baking dish.
9. Top the pasta with the sliced baguette, glass pasta, and chopped basil.
10. Sprinkle the pan rallado over the top of the pasta bake.
11. Cover the baking dish with foil and bake in the preheated oven for 30 minutes.
12. Remove the foil and bake for an additional 10-15 minutes, or until the top is golden brown and bubbly.
13. Serve the Mexican-inspired pasta bake hot, garnished with sliced avocados.
