Make Mexican Rice and Beans
Mexican Rice and Beans
Ingredients:
-1 cup uncooked white rice
-1 can black beans, drained and rinsed
-1 can diced tomatoes
-1/2 teaspoon garlic powder
-1/2 teaspoon onion powder
-1/2 teaspoon chili powder
-1/4 teaspoon cumin
-1/4 teaspoon paprika
-Salt and pepper, to taste
Instructions:
1. In a medium saucepan, bring 2 cups of water to a boil.
2. Add the rice and stir. Reduce the heat to low, cover the pan, and simmer for 15 minutes.
3. Add the beans, tomatoes, garlic powder, onion powder, chili powder, cumin, and paprika. Stir to combine.
4. Cover the pan and simmer for an additional 10 minutes, or until the rice is cooked through.
5. Season with salt and pepper, to taste.
6. Serve warm. Enjoy!
