Mexican Rice Bowl
Ingredients:
-1 cup cooked rice
-1 slice of bread, toasted
-1/2 cup cooked beans
-1/2 cup diced tomatoes
-1 tablespoon olive oil
-1 teaspoon chili powder
-1/2 teaspoon garlic powder
-1/2 teaspoon ground cumin
-Salt and pepper, to taste
Instructions:
1. Heat the olive oil in a large skillet over medium heat.
2. Add the diced tomatoes and cook for 2-3 minutes, stirring occasionally.
3. Add the chili powder, garlic powder, cumin, salt, and pepper. Stir to combine.
4. Add the cooked beans and cooked rice and stir to combine.
5. Cook for an additional 2-3 minutes, stirring occasionally.
6. Serve the Mexican rice bowl with the toasted bread. Enjoy!
