Mexican Rice Bowl
Ingredients:
- 2 eggs
- 1 can of beans, drained and rinsed
- 2 tomatoes, diced
- 1/4 cup of fresh cream
- 2 cups of cooked rice
Instructions:
1. In a large skillet, heat some oil over medium heat.
2. Crack the eggs into the skillet and cook until the whites are set and the yolks are still runny.
3. Remove the eggs from the skillet and set aside.
4. Add the beans to the skillet and cook for 3-4 minutes.
5. Add the tomatoes and cook for another 2-3 minutes.
6. Add the cream and stir to combine.
7. Add the cooked rice and stir to combine.
8. Return the eggs to the skillet and stir to combine.
9. Cook for an additional 2-3 minutes, or until everything is heated through.
10. Serve the Mexican Rice Bowl warm. Enjoy!
