Mexican Rice Bowl
Ingredients:
- 1 cup uncooked white rice
- 1/2 cup cooked kidney beans
- 1/2 cup crushed tomatoes
- 1/2 cup cooked lentils
- 1/2 cup cooked chilli beans
- 1/2 cup cooked elbow macaroni
- 1 teaspoon olive oil
- Salt and pepper to taste
Instructions:
1. Heat the olive oil in a large skillet over medium heat.
2. Add the uncooked rice and cook, stirring frequently, until the rice is lightly toasted, about 5 minutes.
3. Add the cooked kidney beans, crushed tomatoes, lentils, chilli beans, and macaroni to the skillet. Stir to combine.
4. Reduce the heat to low and cover the skillet. Simmer for 15 minutes, stirring occasionally.
5. Add salt and pepper to taste. Serve warm.
