Mexican-Style Beef and Potato Skillet

Ingredients:
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 pound ground beef
- 2 potatoes, peeled and diced
- 1 (15 ounce) can kidney beans, drained and rinsed
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon paprika
- 1 teaspoon chili powder

Instructions:

1. Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.

2. Add the ground beef and cook until browned, about 5 minutes.

3. Add the potatoes, kidney beans, salt, pepper, paprika, and chili powder. Stir to combine.

4. Reduce the heat to low and cover the skillet. Simmer for 20 minutes, or until the potatoes are tender.

5. Serve hot. Enjoy!
