Recipe Name: Middle Eastern Potato and Ful Salad

Ingredients:
- 4 medium potatoes, peeled and diced
- 1 can of ful (fava beans), drained and rinsed
- 1 red bell pepper, diced
- 1/4 cup olive oil
- Juice of 1 lemon
- 2 cloves of garlic, minced
- Salt and pepper to taste
- Fresh parsley, chopped for garnish

Instructions:
1. Boil the diced potatoes in a pot of salted water until they are fork-tender. Drain and let them cool.
2. In a large bowl, combine the cooked potatoes, ful, and diced red bell pepper.
3. In a small bowl, whisk together the olive oil, lemon juice, minced garlic, salt, and pepper.
4. Pour the dressing over the potato and ful mixture and toss gently to combine.
