Mince and Pumpkin Lettuce Wraps
Ingredients:
- 2 slices of bread
500g of mince
1 onion, diced
2 cloves of garlic, minced
1/2 a lemon, juiced
2 cups of shredded lettuce
1 cup of diced pumpkin
1/2 a cucumber, diced
Salt and pepper, to taste
Instructions:
1. Preheat the oven to 180°C.
2. Place the bread slices on a baking tray and bake for 10 minutes until golden brown.
3. Heat a large frying pan over medium heat and add the mince, onion and garlic. Cook for 8-10 minutes until the mince is cooked through.
4. Add the lemon juice, salt and pepper and stir to combine.
5. Remove the bread from the oven and cut into small cubes.
6. In a large bowl, combine the lettuce, pumpkin, cucumber, bread cubes and mince mixture.
7. Divide the mixture into 4 portions and spoon into the lettuce leaves.
8. Serve with extra lemon wedges, if desired. Enjoy!
