Make Minty Basmati Rice

Minty Basmati Rice

Ingredients:

- 2 cups basmati rice
- 1/2 cup frozen peas
- 1/2 cup diced carrots
- 1/4 cup chopped fresh mint
- 1 teaspoon salt
- 1/2 cup diced onion

Instructions:

1. Rinse the basmati rice in a fine mesh strainer until the water runs clear.

2. Place the rice in a medium-sized pot and cover with 2 cups of water.

3. Bring the water to a boil, then reduce the heat to low and cover the pot.

4. Simmer for 15 minutes, or until the water is absorbed.

5. Add the frozen peas, diced carrots, chopped mint, salt, and diced onion to the pot.

6. Stir to combine, then cover the pot and simmer for an additional 10 minutes.

7. Fluff the rice with a fork and serve. Enjoy!
