Minty Potato and Tomato Curry
Ingredients:
- 2 potatoes, peeled and diced
- 2 tomatoes, diced
- 2 tablespoons of chilli powder
- 1 teaspoon of salt
- 1 tablespoon of mint leaves, finely chopped
- 2 tablespoons of oil
- 200g of diced chicken
- 200g of diced mutton
Instructions:
1. Heat the oil in a large saucepan over medium heat.
2. Add the diced potatoes and tomatoes and cook for 5 minutes, stirring occasionally.
3. Add the chilli powder, salt and mint leaves and stir to combine.
4. Add the diced chicken and mutton and cook for a further 10 minutes, stirring occasionally.
5. Reduce the heat to low and simmer for 30 minutes, stirring occasionally.
6. Serve hot with steamed rice or naan bread. Enjoy!
