Minty Sardine Potato Salad
Ingredients:
- 2 large potatoes, peeled and cubed
- 2 cans of sardines, drained
- 2 tablespoons of white vinegar
- 1/4 cup of chopped fresh mint
- 1/4 cup of chopped onion
- 2 cups of fresh spinach, chopped
Instructions:
1. Place the cubed potatoes in a pot of boiling water and cook until tender, about 10 minutes. Drain and set aside.
2. In a large bowl, combine the sardines, vinegar, mint, onion, and spinach.
3. Add the cooked potatoes to the bowl and mix until everything is well combined.
4. Serve the salad chilled or at room temperature. Enjoy!
