Minty Urad Dal Rice

Ingredients:

- 1 cup of rice
- 1/2 cup of urad dal
- 1 onion, diced
- 1/4 cup of mint leaves, chopped
- 1/2 teaspoon of salt
- 1 cup of cauliflower, chopped

Instructions:

1. Rinse the rice and urad dal in a bowl and set aside.

2. Heat a large pan over medium heat and add the onion. Cook for 2-3 minutes until softened.

3. Add the rice, urad dal, mint leaves, salt, and cauliflower to the pan. Stir to combine.

4. Add 2 cups of water to the pan and bring to a boil.

5. Reduce the heat to low, cover the pan, and simmer for 20 minutes or until the rice and dal are cooked through.

6. Serve the minty urad dal rice hot. Enjoy!
