Make Misal Pav

Recipe Name: Misal Pav

Ingredients:
- 1 cup sprouted moth beans (matki)
- 1 onion, finely chopped
- 1 tomato, finely chopped
- 2-3 green chilies, finely chopped
- 1/2 inch ginger, grated
- 2-3 cloves of garlic, minced
- 1/2 tsp turmeric powder
- 1 tsp red chili powder
- 1 tsp garam masala
- 1 tsp cumin seeds
- 1/2 cup mixed farsan (sev)
- 1/4 cup chopped coriander leaves
- Salt to taste
- Oil for cooking
- Pav (bread rolls) for serving

For the Tamarind Date Chutney:
- 1/2 cup tamarind pulp
- 1/4 cup date pulp
- 2-3 tbsp jaggery
- 1 tsp red chili powder
- Salt to taste

For the Green Chutney:
- 1 cup fresh coriander leaves
- 1/2 cup fresh mint leaves
- 2-3 green chilies
- 1/2 inch ginger
- 1 clove of garlic
- Salt to taste
- Water as needed

Step by Step Guide:

1. Heat oil in a pan and add cumin seeds. Once they splutter, add chopped onions and sauté until they turn translucent.

2. Add minced garlic, grated ginger, and green chilies. Sauté for a minute.

3. Add chopped tomatoes and cook until they turn soft and mushy.

4. Add turmeric powder, red chili powder, garam masala, and salt. Mix well.

5. Add the sprouted moth beans and mix everything together. Add water as needed to cook the sprouts until they are soft.

6. In a separate pan, prepare the tamarind date chutney by combining tamarind pulp, date pulp, jaggery, red chili powder, and salt. Cook until it thickens.

7. For the green chutney, blend coriander leaves, mint leaves, green chilies, ginger, garlic, and salt with some water to make a smooth paste.

8. Once the sprouts are cooked, assemble the misal pav. Take a serving bowl, add a ladle of sprouted moth beans, top it with mixed farsan, chopped onions, coriander leaves, tamarind date chutney, and green chutney.

9. Serve hot with pav (bread rolls) on the side.
