Make Misal Pav

Recipe Name: Misal Pav

Ingredients:
- 1 cup sprouted moth beans (matki)
- 1 onion, finely chopped
- 1 tomato, finely chopped
- 2-3 green chilies, chopped
- 1/2 inch ginger, grated
- 2-3 cloves of garlic, minced
- 1/2 tsp turmeric powder
- 1 tsp red chili powder
- 1 tsp garam masala
- 1 tsp cumin seeds
- 1/2 tsp mustard seeds
- A pinch of asafoetida (hing)
- Salt to taste
- Oil for cooking
- Fresh coriander leaves for garnishing
- Lemon wedges for serving
- Pav (bread rolls) for serving

Step by Step Guide:
1. Heat oil in a pan and add cumin seeds and mustard seeds. Let them splutter.
2. Add chopped onions and sauté until they turn translucent.
3. Add green chilies, ginger, and garlic. Sauté for a minute.
4. Add chopped tomatoes and cook until they turn soft and mushy.
5. Add turmeric powder, red chili powder, garam masala, and salt. Mix well.
6. Add the sprouted moth beans and mix everything together.
7. Add water as needed to cover the beans and bring it to a boil.
8. Lower the heat, cover the pan, and let it simmer until the beans are cooked through.
9. Once the beans are cooked, mash some of them lightly to thicken the curry.
10. Adjust the seasoning and consistency of the curry as per your preference.
11. In a separate pan, heat some oil and add a pinch of asafoetida.
12. Pour this tempering over the misal curry.
13. Garnish with fresh coriander leaves.
14. Serve hot misal with pav, lemon wedges, and some chopped onions on the side.
