Miso-Glazed Beef and Potato Stir-Fry

Ingredients:

- 2 tablespoons vegetable oil
- 1 pound beef sirloin, cut into thin strips
- 1 large potato, peeled and cut into thin slices
- 1/4 cup creamy peanut butter
- 1 large tomato, diced
- 1 large egg, lightly beaten
- 1/4 cup red wine
- 2 tablespoons miso paste

Instructions:

1. Heat the oil in a large skillet over medium-high heat. Add the beef and cook for 3-4 minutes, stirring occasionally, until lightly browned.

2. Add the potato slices and cook for an additional 3-4 minutes, stirring occasionally, until the potatoes are tender.

3. Reduce the heat to medium and add the peanut butter, tomato, egg, red wine, and miso paste. Stir to combine and cook for an additional 2-3 minutes, stirring occasionally, until the sauce is thick and bubbly.

4. Serve the stir-fry over cooked rice or noodles. Enjoy!
