Miso Ramen with Portabello Mushroom and Vegetables

Ingredients:

-1 tablespoon butter
-1 onion, diced
-2 cloves garlic, minced
-1 portabello mushroom, sliced
-1 carrot, diced
-1 cup spinach
-1 cup kale
-1 cup broccolini
-1 cup cooked chicken, diced
-1 cup coconut curry
-2 cups miso ramen broth
-1 cup cooked rice
-1 cup cooked pasta
-2 tablespoons crème fraiche
-2 tablespoons chives, chopped
-1 tomato, diced

Instructions:

1. Heat the butter in a large pot over medium heat.

2. Add the onion and garlic and cook until softened, about 5 minutes.

3. Add the portabello mushroom, carrot, spinach, kale, and broccolini and cook for 5 minutes.

4. Add the chicken, coconut curry, and miso ramen broth and bring to a boil.

5. Reduce the heat to low and simmer for 10 minutes.

6. Add the cooked rice and pasta and simmer for another 5 minutes.

7. Stir in the crème fraiche, chives, and tomato and simmer for another 5 minutes.

8. Serve hot with additional chives and crème fraiche, if desired. Enjoy!
