Miso Tofu Bowl

Ingredients:

- 2 tablespoons of miso paste

- 1 block of firm tofu, cubed

- 2 cups of shredded cabbage

- 2 carrots, shredded

- 2 spring onions, chopped

- 2 tablespoons of oil

- Salt and pepper to taste

Instructions:

1. Heat the oil in a large skillet over medium-high heat.

2. Add the cubed tofu and cook until lightly golden, about 5 minutes.

3. Add the cabbage, carrots, and spring onions and cook until the vegetables are tender, about 5 minutes.

4. Add the miso paste and stir to combine.

5. Cook for an additional 2 minutes.

6. Season with salt and pepper to taste.

7. Serve the miso tofu bowl over cooked rice or quinoa. Enjoy!
